Dark Beet and Black Bean Hummus

Dark Beet and Black Bean Hummus is a rich, flavorful dip with a stunning deep hue and a velvety texture. Ingredients

  • 1 medium Beet, roasted and peeled (35 calories)
  • 1 cup Black beans, cooked (227 calories)
  • 2 tbsp Tahini (178 calories)
  • 1 clove Garlic (4 calories)
  • 2 tbsp Olive oil (240 calories)
  • 2 tbsp Lemon juice (8 calories)
  • 1/2 tsp Salt (0 calories)
  • 1/4 tsp Black pepper (0 calories)
  • 1/4 tsp Ground cumin (4 calories)

Instructions

  1. Roast the beet ahead of time by wrapping it in foil and baking at 400°F (200°C) for about 45 minutes, or until tender. Let cool, then peel.
  2. In a food processor, combine the roasted beet, black beans, tahini, garlic, olive oil, lemon juice, salt, pepper, and cumin.
  3. Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.
  4. Transfer the hummus to a serving bowl. Garnish with a drizzle of olive oil or fresh herbs, if desired.
  5. Serve with fresh vegetables, pita chips, or as a spread.
