  • 1/2 teaspoon salt (0 calories)
  • 1/4 cup blackstrap molasses (234 calories)
  • 2 teaspoons anise extract (0 calories)
  • Black food coloring (optional, 0 calories)

Instructions

  • Prepare the Pan: Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the parchment paper.
  • Combine Ingredients: In a heavy-bottomed saucepan, combine the sugar, corn syrup, butter, cream, and salt. Cook over medium heat, stirring constantly, until the mixture begins to simmer.
  • Cook the Caramel: Attach a candy thermometer to the side of the pan. Continue to cook, stirring occasionally, until the mixture reaches 245°F (118°C), about 20-25 minutes.
  • Add Flavoring: Remove the pan from heat and stir in the molasses, anise extract, and black food coloring, if using. Mix until well combined.
  • Pour and Cool: Pour the caramel into the prepared pan, spreading it evenly. Allow the caramel to cool at room temperature for at least 2 hours, or until fully set.
  • Cut into Pieces: Once set, lift the caramel out of the pan using the parchment overhang. Cut into 36 pieces using a sharp knife.
  • Store: Wrap each piece in wax paper or parchment paper to prevent sticking. Store in an airtight container at room temperature.
