  • 1 large red bell pepper ( approx 45 calories)
  • 1 large orange bell pepper ( approx 45 calories)
  • 1 large yellow bell pepper ( approx 45 calories)
  • 1 large green bell pepper ( approx 45 calories)
  • 1 large purple eggplant ( approx 110 calories)
  • 1 tablespoon olive oil ( approx 119 calories)
  • Salt and pepper (negligible calories)

Midnight Black Hummus

  • 1 can (15 oz) black beans (approx 315 calories)
  • 2 cloves garlic (approx 9 calories)
  • 2 tablespoons tahini (approx 180 calories)
  • 2 tablespoons lemon juice (approx 8 calories)
  • 1/4 cup olive oil (approx 477 calories)
  • 1/2 teaspoon sea salt (negligble calories)
  • 1/4 teaspoon black pepper (negligble calories)
