Black Licorice Caramels
Ingredients
- 1 cup granulated sugar (774 calories)
- 1 cup light corn syrup (962 calories)
- 1/2 cup unsalted butter (814 calories)
- 1 cup heavy cream (821 calories)
- 1/2 teaspoon salt (0 calories)
- 1/4 cup blackstrap molasses (234 calories)
- 2 teaspoons anise extract (0 calories)
- Black food coloring (optional, 0 calories)
Instructions
- Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the parchment paper.
- In a heavy-bottomed saucepan, combine the sugar, corn syrup, butter, cream, and salt. Cook over medium heat, stirring constantly, until the mixture begins to simmer.
- Attach a candy thermometer to the side of the pan. Continue to cook, stirring occasionally, until the mixture reaches 245°F (118°C), about 20-25 minutes.
- Remove the pan from heat and stir in the molasses, anise extract, and black food coloring, if using. Mix until well combined.
- Pour the caramel into the prepared pan, spreading it evenly. Allow the caramel to cool at room temperature for at least 2 hours, or until fully set.
- Once set, lift the caramel out of the pan using the parchment overhang. Cut into 36 pieces using a sharp knife.
- Wrap each piece in wax paper or parchment paper to prevent sticking. Store in an airtight container at room temperature.
