Black Licorice Caramels

  • 1 cup granulated sugar (774 calories)
  • 1 cup light corn syrup (962 calories)
  • 1/2 cup unsalted butter (814 calories)
  • 1 cup heavy cream (821 calories)
  • 1/2 teaspoon salt (0 calories)
  • 1/4 cup blackstrap molasses (234 calories)
  • 2 teaspoons anise extract (0 calories)
  • Black food coloring (optional, 0 calories)

Instructions

  1. Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the parchment paper.
  2. In a heavy-bottomed saucepan, combine the sugar, corn syrup, butter, cream, and salt. Cook over medium heat, stirring constantly, until the mixture begins to simmer.
  3. Attach a candy thermometer to the side of the pan. Continue to cook, stirring occasionally, until the mixture reaches 245°F (118°C), about 20-25 minutes.
  4. Remove the pan from heat and stir in the molasses, anise extract, and black food coloring, if using. Mix until well combined.
  5. Pour the caramel into the prepared pan, spreading it evenly. Allow the caramel to cool at room temperature for at least 2 hours, or until fully set.
  6. Once set, lift the caramel out of the pan using the parchment overhang. Cut into 36 pieces using a sharp knife.
  7. Wrap each piece in wax paper or parchment paper to prevent sticking. Store in an airtight container at room temperature.
