Black Rice and Mango Summer Rolls with Charcoal Dipping Sauce
Ingredients
For the Summer Rolls
- 1 cup Cooked black rice (200 calories)
- 8 sheets Rice paper (320 calories)
- 1 large Mango, sliced (135 calories)
- 1 cup Julienned carrots (50 calories)
- 1 cup Julienned cucumber (16 calories)
- 1/4 cup Fresh mint leaves (4 calories)
- 1/4 cup Fresh cilantro leaves (4 calories)
For the Charcoal Dipping Sauce
- 1/4 cup Soy sauce (10 calories)
- 1 tbsp Lime juice (4 calories)
- 1 tsp Activated charcoal powder (0 calories)
- 1 tsp Honey (21 calories)
- 1 clove Garlic, minced (4 calories)
- 1 tsp Sesame oil (40 calories)
Instructions
For the Summer Rolls
- Cook the black rice according to package instructions and let it cool completely.
- Prepare a large shallow dish with warm water. Dip one rice paper sheet into the water for about 10 seconds, or until softened.
- Lay the softened rice paper on a clean surface. Place a small amount of black rice, mango slices, carrots, cucumber, mint, and cilantro in the center.
- Fold in the sides of the rice paper and roll it tightly to form a cylinder. Repeat with the remaining ingredients.
For the Charcoal Dipping Sauce
- In a small bowl, whisk together soy sauce, lime juice, activated charcoal powder, honey, garlic, and sesame oil until smooth.
