Blackened Cauliflower Steaks with Spicy Chimichurri

  • 1 large Head of cauliflower, sliced into steaks (200 calories)
  • 2 tbsp Olive oil (240 calories)

  • 2 tbsp Red wine vinegar (4 calories)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Remove the outer leaves and trim the stem of the cauliflower, leaving the core intact. Slice into 1-inch-thick steaks.
  3. In a small bowl, mix smoked paprika, cumin, cayenne pepper, garlic powder, salt, and black pepper.
  4. Brush both sides of each cauliflower steak with olive oil and sprinkle with the spice mixture.
  5. Arrange the steaks on the prepared baking sheet and roast for 20-25 minutes, flipping halfway through, until golden and tender.
  6. While the cauliflower roasts, prepare the chimichurri. In a bowl, combine parsley, cilantro, garlic, olive oil, red wine vinegar, and crushed red pepper flakes. Stir to blend and adjust seasoning with salt to taste.
  7. Serve the blackened cauliflower steaks hot, drizzled with spicy chimichurri.
