Ghostly Meringue Cookies

  • 4 large egg whites (68 calories)
  • 1 cup granulated sugar (774 calories)

  • 2 tbsp mini chocolate chips (for decoration) (70 calories)

Instructions

  1. Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, whisk egg whites and cream of tartar using a mixer at medium speed until soft peaks form.
  3. Gradually add sugar, 1 tablespoon at a time, beating at high speed until stiff peaks form and the sugar is dissolved.
  4. Mix in vanilla extract gently.
  5. Transfer the meringue mixture to a piping bag fitted with a round tip. Pipe ghost-like shapes onto the parchment paper.
  6. Decorate with mini chocolate chips to form eyes and mouths.
  7. Bake for 2 hours. Turn off the oven and leave the cookies inside with the oven door closed for 1 hour. This gradual cooling helps prevent cracking and keeps the meringues crisp.
