  • 2 cups all-purpose flour (approx 912 calories)
  • 1 1/2 teaspoons baking powder (approx 2 calories)
  • 1/2 teaspoon baking soda (approx 0 calories)
  • 1/4 teaspoon salt (approx 0 calories)
  • 1/2 cup unsalted butter, softened (approx 814 calories)
  • 1 cup granulated sugar (approx 774 calories)
  • 2 large eggs (approx 144 calories)
  • 1 teaspoon vanilla extract (approx 12 calories)
  • 1 cup buttermilk (approx 152 calories)
  • Black food coloring (optional) (negligible calories)
  • Edible flowers or fruit for decoration (optional) (negligible calories)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a small saucepan, combine the blackberries and dried lavender. Cook over medium heat, stirring occasionally, until the berries break down and release their juices, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a separate large mixing bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the eggs, one at a time, followed by the vanilla extract.
  6. Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk, until just combined. Be careful not to overmix.
  7. Gently fold in the blackberry-lavender mixture until evenly distributed throughout the batter. If desired, add a few drops of black food coloring to intensify the color.
  8. Pour the batter into the prepared cake pan and spread it out evenly.
  9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Once the cake has cooled, you can decorate it with an icing of your choice and edible flowers or fruit for a touch of springtime elegance.
