Black Deviled Eggs with Avocado Filling

  • 6 large eggs (420 calories)
  • 1 cup soy sauce (50 calories)
  • 1 cup balsamic vinegar (224 calories)
  • 1 large avocado (234 calories)
  • 2 tablespoons mayonnaise (188 calories)
  • 1 tablespoon lime juice (4 calories)
  • 1 teaspoon Dijon mustard (3 calories)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Paprika for garnish (optional, negligible calories)

Instructions

  1. Place the eggs in a pot of water, bring to a boil, and cook for 10 minutes. Remove from heat, drain, and place in cold water.
  2. In a bowl, mix soy sauce and balsamic vinegar.
  3. Peel the boiled eggs and place them in the soy sauce and balsamic vinegar mixture. Let them soak for at least 3 hours or overnight for a deeper color.
  4. Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Add mayonnaise, lime juice, Dijon mustard, salt, and pepper. Mash until smooth.
  5. Slice the dyed eggs in half lengthwise. Remove the yolks and add them to the avocado mixture. Mix until smooth.
  6. Spoon the avocado filling into the egg whites. Garnish with paprika if desired.
