Black Deviled Eggs with Avocado Filling
Ingredients
- 6 large eggs (420 calories)
- 1 cup soy sauce (50 calories)
- 1 cup balsamic vinegar (224 calories)
- 1 large avocado (234 calories)
- 2 tablespoons mayonnaise (188 calories)
- 1 tablespoon lime juice (4 calories)
- 1 teaspoon Dijon mustard (3 calories)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Paprika for garnish (optional, negligible calories)
Instructions
- Place the eggs in a pot of water, bring to a boil, and cook for 10 minutes. Remove from heat, drain, and place in cold water.
- In a bowl, mix soy sauce and balsamic vinegar.
- Peel the boiled eggs and place them in the soy sauce and balsamic vinegar mixture. Let them soak for at least 3 hours or overnight for a deeper color.
- Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Add mayonnaise, lime juice, Dijon mustard, salt, and pepper. Mash until smooth.
- Slice the dyed eggs in half lengthwise. Remove the yolks and add them to the avocado mixture. Mix until smooth.
- Spoon the avocado filling into the egg whites. Garnish with paprika if desired.
